Favorite Comfort Food

Brownies. That is the food that brings me the most comfort. You already know that, though. You've been getting to know me over these last few weeks and I've already mentioned my love of brownies. You know that I like to switch them up from time to time. Throw in a box of Junior Mints here. Stir in some peanut butter there. If you want to get really crazy you could swirl a bit of cream cheese in with cherry pie filling. And don't forget the olive oil. It is the oil that makes the perfect amount of brownie goo.

A couple weeks ago when Herr Winter and I went to the Interfaith Luncheon, it happened to be National Chocolate Day. It was the Sunday before Valentine's Day and I wanted to put some love into what I prepared. I also wanted what I made to be somewhat symbolic of St. Louis. I did a quick search for chocolate gooey butter cake and found an even better idea: 

 GOOEY BUTTER BROWNIES

PREP TIME: 10 MINUTES

COOK TIME: 40 MINUTES

TOTAL TIME: 50 MINUTES

INGREDIETS:

For the brownies:
1 box brownie mix
1 egg
8 tablespoons butter, melted
For the topping:
8 ounces cream cheese, room temperature
2 eggs
8 tablespoons butter, melted
1 teaspoon vanilla
16 ounces powdered sugar

DIRECTIONS:

Preheat oven to 350 degrees.
To make the brownie base, mix together the dry mix, egg, and melted butter. Spread into a greased 9x13 baking dish.
To make the topping, beat together the cream cheese, eggs, vanilla, butter, and powdered sugar until well combined. Spread over the brownies.
Bake for 40 minutes or until the center is still slightly jiggly and gooey. Cool before serving.

All credit for this decadent dessert goes to BunsInMyOven.com. Did you notice how much butter and powdered sugar is called for?! You can easily cut those amounts in half and still get excellent results. This could make for a decidedly St. Louis flair and flavor for your wedding as a dessert or cake option.  If you can't find comfort in a couple sticks of butter, a pound of powered sugar, and gooey, chocolate cakey goodness, I don't know what will.
